Pumpkin seeds are a powerhouse of zinc and magnesium, providing steady energy for a long day of outdoor play.
Ingredients Checklist(tap to check off)
- 2 cups Rolled oats
- 1 cup Raw pumpkin seeds (pepitas)
- 1/3 cup Real maple syrup
- 1/2 cup Raw sunflower seed butter (or almond butter)
- 1 teaspoon Ground cinnamon
Baking Instructions(tap to mark complete)
- Preheat oven to 325°F and grease or line an 8-inch square baking dish with parchment paper.
- In a large bowl, mix the 2 cups of rolled oats, 1 cup of pumpkin seeds, and 1 teaspoon of cinnamon.
- In a small microwave-safe bowl or small saucepan, heat the seed butter and maple syrup until melted and smooth. Stir into the dry ingredients.
- Press the mixture firmly and evenly into the prepared baking dish using the back of a spoon.
- Bake for 10 to 12 minutes until slightly golden at the edges. Let cool completely in the pan before slicing into bars.
