- 1 1/2 cups (135g) Rolled oats (quick or old fashioned)
- 1/2 cup (125g) Creamy sunflower seed butter (or peanut butter)
- 1/3 cup (80ml) Pure honey or maple syrup
- 1/3 cup (60g) Mini semi-sweet chocolate chips
- 2 tablespoons (20g) Chia seeds or hemp hearts
- 1/2 teaspoon Pure vanilla extract
- 1 pinch Sea salt
Cooking Instructions(tap to mark complete)
- In a medium mixing bowl, combine the rolled oats, sunflower seed butter, honey, vanilla extract, and pinch of salt.
- Stir with a sturdy wooden spoon or rubber spatula until a sticky, uniform dough forms.
- Gently fold in the mini chocolate chips and chia seeds.
- Using a small cookie scoop or tablespoon, scoop portions and roll firmly between your palms into 1-inch balls.
- Place on a parchment-lined plate and chill in the fridge for 15 minutes to firm up.
- Store in an airtight container for up to 2 weeks in the fridge or freeze for up to 3 months. Pop 2 into lunchboxes daily!
