Ingredients Checklist(tap to check off)
- 1/2 cup (80g) Leftover seasoned taco meat (ground turkey, beef, chicken, or black beans)
- 3/4 cup (110g) Leftover cooked brown or white rice
- 1/4 cup (35g) Sweet canned or frozen corn kernels
- 2 tablespoons (30ml) Mild tomato salsa or pico de gallo
- 1/4 cup (25g) Shredded mild cheddar or Monterey Jack cheese
- 1 small handful Whole-grain tortilla chips (packed separately)
Cooking Instructions(tap to mark complete)
- Preheat your child's insulated thermos with boiling hot water for 3-5 minutes, then dump out the water.
- In a microwave-safe bowl, combine the leftover taco meat, leftover rice, and sweet corn. Microwave for 60-90 seconds until steaming hot.
- Stir in the mild salsa, then immediately transfer half the hot rice-meat mixture into the bottom of the warmed thermos.
- Sprinkle in half the shredded cheese, top with the remaining hot mixture, and finish with the rest of the cheese on top (it melts into a gooey cheese blanket!).
- Seal the thermos tightly. Pack in the lunchbox alongside a small baggie of crispy tortilla chips and a lime wedge!
